Vinification

Production and wine description: The grapes are harvested early in the morning and pressed directly to prevent oxidation influencing the wine in any way and to retain natural freshness. The gentle processing of the grapes ensures the extraordinary transparency and lightness of the wine. The juice is fermented in stainless steel tanks using natural yeasts from the vineyard in a temperature-controlled process.
The resulting wine is characterised by a fine, very delicate pink colour. It quickly evokes associations with almond and cherry blossom, which are further emphasised by the wine's aroma. This is emphasised by hints of cherry and strawberry fruit. On the palate, Mediterranean herbal flavours and citrus fruits are paired with a fine minerality. Hints of green olives give the wine the necessary tension.
