Vinification
The grapes, harvested in the early morning, are pressed directly to avoid any influence of oxidation and to preserve the natural freshness. The gentle processing of the grapes ensures the exceptional freshness and elegance of the wine. The juice is fermented in stainless steel tanks with the vineyard's own yeasts under temperature control. The resulting wine is characterised by its complex aroma. On the nose, ripe apricot, honeydew melon and vineyard peach. In addition, the characteristic garrigue tone of the Luberon. On the palate, fine, well-integrated acidity, with a good balance of freshness and serious depth. On the finish, the ripe yellow fruitiness meets animating minerality and saltiness.
