Weathered limestone with a high iron content imparts characteristic colours to the soil. The lowland soil contains erosion material enriched with marsh deposits from the Alps, which are mostly oxidised, giving rise to
the grey hues. Zones range from sandy to clay-rich.

Each plot is harvested individually. Maceration is brief, while the grapes are freshly pressed over a long period. Vinification in stainless steel. On the nose there's white peach, sweet melon and also a little apricot. Leaving the wine on full lees long-term yields a creamy, delicate wine with elegant, very well-integrated acidity. It has an almost velvety finish and a texture reminiscent of tannins. Here too, the finish is infused with the typical Provençal bouquet garni (bay leaf and Garrigue). A light, easy-to-drink wine which nonetheless expresses the strength and characteristics of the south.
Food and Wine Pairing
A raw spring vegetable platter of cucumbers, celery sticks, carrots, tomatoes, radishes and peppers, dressed with vinaigrette or a mustard and mayonnaise sauce. A simple snacking platter with fresh butter and rustic bread. Taboulé, a middle-eastern dish with notes of spice and mint. All of the above offer the freshness that goes so well with a young white wine like Aphélie.
