The grapes are harvested by hand early in the morning and destemmed after a night in a refrigerated container. They are then sorted or sent to stainless steel tanks for alcoholic fermentation. This delicate treatment of the grapes ensures the exceptional fruitiness and fine tannic structure of the wine. The juice is fermented at controlled temperatures with indigenous yeasts.
The resulting wine is characterised by a fine, delicate red colour. The nose is highlighted by notes of raspberry and strawberry. On the palate, slightly candied fruit, chocolate and black pepper notes, subtle and well-integrated acidity, soft but present tannins on the finish, Mediterranean herbal spices are combined with a very fine, almost saline minerality. The length and power of the wine integrates the fine fruit acidity.
