Vinification
The grapes, hand-harvested in small crates early in the morning, are additionally cooled down in refrigerated containers to avoid any influence of oxidation and to preserve the natural freshness. The gentle processing of the grapes ensures the exceptional fineness and elegance of the wine. The juice is fermented in stainless steel tanks with the vineyard's own yeasts under temperature control. The resulting wine is characterised by the complexity of its aroma. On the nose, ripe apricot, honeydew melon and vineyard peach. Also exotic hints of pineapple and passion fruit. On the palate, fine, well-integrated acidity, with a good balance of freshness and great depth. On the finish, the ripe yellow fruitiness meets animating minerality and saltiness.
Food and Wine Pairing
Light poultry in morel cream, green and white asparagus with hollandaise sauce, complex fish and poultry-based terrines, duck on orange or a classic paella, large raw milk cheeses from goat or sheep.
