Weathered limestone with a high iron content imparts characteristic colours to the soil. The lowland soil contains erosion material enriched with marsh deposits from the Alps, which are mostly oxidised, giving rise to the grey hues. Zones range from sandy to clayrich.

Fresh pressing of the Grenache grapes (for finesse), Caladoc grapes (for robustness) and Cinsault grapes (for fruitiness and richness) in equal parts. This wine, with an onion-skin hue, has a nose characterised by grapefruit, bloodorange and orange zest. Subtle herbal and spicy notes are reflected in the robust palate in the form of aniseed and bay leaf, alongside strawberry, peach and mandarin. Right through to its lingering finish, this dry wine opens up whole new world of taste.
Food and Wine Pairing
The classic Mediterranean dish of panfried monkfish fillet with tomato and zucchini isa wonderful partner to Rosé Elyo. The wine's freshness and robust yet delicate nature make for the perfect combination with this exciting fish dish in which basil underpins the fine acidity of the sun-ripened tomatoes. With its moreish saffron notes, the wine underlines the fine fish aromas to create a taste explosion.
